You can set session start time for some indicators (CVD, VWAP) and some columns only. Could you please clarify why do you need this feature and the context of using it.

I would also need to set ETH (extended trading hours) / RTH (regular trading hours) for volume profiles columns.
I would for example need a volume profile for the ES entire session (ETH): 6 PM previous day -> 5 PM next day (eastern time).
As well as regular trading hour session volume profile from 9:30 AM -> 4:15 PM.

Without being able to set this, volume profile information is not accurate, not to say misleading.
Also this would help see ETH/RTH day high/low on the profiles.

These are very much needed.
So settings of volume profile should include setting start / end time, BUT should also be able to be smart enough to deal with trading session that span over 2 different days as is the case with lots of ETH sessions. This would not cause problem with 24 hours data limitation as sessions, even ETH, would still require <= 24 hours of data.

Current version does not allow a custom reset time for a column. Currently, the only way is to use multiple columns and reset the anytime you need.
I have moved your post to Feature Requests. We'll consider this feature to be implemented. To give it a high priority encourage other traders to make posts in your new topic.

I see you had raised this question in 2018,  I am raising the same request in 2022.

As-like in SierraCharts/Tradingview/Thinkorswim charts, we have that option to turn-off extended hours to have a better view of business in regular hours between 9:30am to 4:00pm EST.
That helps to reduce noise and see the actual business hours
Setting ETH (extended trading hours) / RTH (regular trading hours) for heatmap chart in bookmap will help to hide all those non-business hours from heatmap. 

Bookmap is an amazing & robust tool that will eventually kill all other charting tools & make it easy for scalpers to trade edge-to-edge.
Their are much better stuff in other charting tools that probably bookmap developers need to incorporate withing bookmap , so-that our dependability on other charting tools reduces.
Features like .. footprint, volume profile with its static/composite levels, VWAP and its Standard-Deviations, flexibility to switch between RTH/ETH hours on heatmap chart.
